One thing you can call Paso is ‘Authentic’. The personalities here are real. The two guests today are the epitome of Authentic Paso. Both describe themselves, and each other for that matter, as salty, so this is sure to be a fun conversation that we’re not even sure Adam can fence in.
Our first of two guests is Neil Collins of Lone Madrone. He also has a popular cider-house and lineup of hard ciders named “Bristols”. He’s been making cider, and wine for that matter, for many decades. By day he is the winemaker for Tablas Creek Vineyard. His wine-making is world-class, and will share a new brand with us today, Hykit Wines, which is an exciting new chapter, and the wine is really good.
Along with Neil, we have on Mark Adams of Ledge Vineyards. Mark is Templeton born and raised, and after grinding in LA in the sound and recording industry, he and his wife returned to the ranch to see what would become of a dream to farm grapes and make wine off the family ranch, which sits in perfect Willow Creek District wine country. Mark linked up with old buddy Justin Smith who was finding his own groove with his brand, Saxum. Mark made a home in the Saxum cellars, and can still be found crushing grapes there, as well as farming and maintaining his estate, Adam’s Ranch.
Both these guys are raw, real, and it is a first that we had to break this convo into two episodes. Part 2 will be posted next week and we will continue our regular schedule and have a new episode as planned biweekly.
