PRIMARY RESPONSIBILITIES:
- Perform supervisory functions as needed including opening and closing shifts

QUALIFICATIONS:
- At least 21 years of age

ONX Estate Wines is looking for experienced, hard-working, and detail-oriented interns to join us for the 2019 harvest at our Tin City Winery.

At ONX winery, we specialize in blends off our west-side estate located in the coveted Templeton Gap AVA, as well as provide custom crush services for a handful of local premium brands.
Interns will join our small, four-person production team in processing small, premium lots over the course of the vintage and be exposed to all facets of the winemaking process. This will include (but not be limited to):

• Crush-pad and sorting-line operations
• Fermentation management (i.e. pump-overs and punch-downs)
• Barrel work (topping, filling, racking, cleaning, etc)
• Sanitation (Make it sparkle)
• Sampling (in cellar and vineyards)
• Wine and must additions
• Participation in on-site benchmark tastings, lot evaluations, and blending trials.
• Laboratory analyses
• Bottling prep and bottling line operations

Candidates must:
• Have a general understanding of fruit processing and fermentation
• Have one year of harvest cellar experience (preferred), but we are willing the train the right candidate
• Possesses great attention to detail
• Work well as a team member
• Be available to work from approximately early August through mid-December (possibility to work through a bottling in late December).
• Be dependable and flexible to work overtime and weekends during the peak of harvest.

ESSENTIAL DUTIES:

Oversees the execution of guest meals following Company menu matrix and recipes, as well as the Company’s core food value of regional, sustainable, and fresh.

Participates as needed in the cooking and preparation of food items as the leader of the away team.

Responsible for final food products during scheduled events, including portioning, preparation, execution, presentation, and flavor profile that fits the Company's seasonal menus.

Responsible for the execution of special dietary restrictions and allergies.

Acts as an ambassador of the Company, and represents the Company as part of the away team.

Thoroughly cleans and organizes all ingredients and catering equipment provided by the Company. Must know the proper use of all equipment and proper procedures and detergents for cleaning and sanitizing all equipment.

Maintains food service operation in absolutely sanitary conditions as outlined by the State of California and San Luis Obispo County Department of Health. Fluent in all regulations for food handlers' standard.

MINIMUM QUALIFICATIONS:

Possesses strong organizational and hospitality skills. A minimum of 2 years of previous sous chef experience and at least three years of experience in kitchen preparation and cooking.

Possesses excellent written communication skills and composes emails and other written correspondence in a professional manner.

Must be comfortable in dealing with guests, winery clients, and event attendees on a regular basis.

Must be creative, knowledgeable of current culinary trends, and a professional that realizes that they are a strategic partner in the success of the Company.

Thorough knowledge of food products, standard recipes, and proper preparation.

Ability to obtain any government required licenses or certificates. For example, Serve Safe certification or any other Food Handler’s permit required by the State of California.

Our tasting room seeks a part-time host, and sales person who would work Friday, Saturday, and Sunday from 9 a.m. – 5:30 p.m. This person will act as our tasting room host with primary duties being to welcome guests, assign them an open table or place at the tasting room bar or in another one of our lounge areas and also introduce the customers to their tasting room attendant who will take them through the flight of wines. This person will also be cross-trained as a tasting room sales associate.

Job Duties:

• First point of contact for guests as they enter our building. Greet all guests with a smile and share information about the guest experiences we offer including tastings, tours, restaurant, and wine club lounge.
• Activate the first step in the Niner sales strategy: acknowledge the customer
• Assist guiding guests to the proper location for their Niner experience which may consist of a tasting, tour, lunch reservation in the restaurant, reserved wine club lounge table, reserve wine tasting, large group tasting or possibly a private event
• Become proficient with our Tock reservation software program and track reservations, assign guests to tables, assign tasting room staff to tables, track table turnover times, and manage the flow of guest traffic and seating in the tasting room
• Assist guests with inquiries and provide recommendations regarding other wineries, restaurants, hotels, etc.
• Ability to book reservations for restaurant and tasting room experiences in Tock
• Maintain and manage reservation lists for all our guest experiences including tours, events and group tastings.
• Promote our wine club and mailing list and assist with WC sign-ups.
• Understand the Niner experiences and be able to talk about them with guests
• Enter guest information into Wine Direct or Tock to establish a customer profile
• Accurately communicate key details of relevance for each booked experience/event to the hospitality staff, tasting room manager, and hospitality director
