We are seeking a Jr. Sous Chef to join our Restaurant Team! The Jr. Sous Chef is responsible for all culinary dishes that are prepared in their section/ department focus. The person in this role must be very knowledgeable about their specialty, as well as culinary functions in general. This candidate must also be very organized and comfortable working in a high-pressure environment. A Jr. Sous Chef must also be able to give clear orders within their section, as well as reliably carry out orders handed down to them by the Chef de Cuisine and Executive Chef. This person must be able to exhibit leadership, mentorship and have a desire to grow their culinary skill set and that of their team.

Job Description
- The Jr. Sous Chef’s primary role is to oversee the preparation and cooking in their work line station for dinner
- Manage daily kitchen prep work and station set-up prior to service and maintaining the highest quality food preparation standards
- Supports the Restaurant with prep & execution of Events, Breakfast, Lunch, & Dinner
- Duties associated with this role: preparing, cooking, and presenting culinary dishes; enforcing strict health and hygiene standards in the kitchen; and trouble-shooting any problems that may arise
- Ensures inventory control and ingredients are stocked; communicates with the Farmstead Team with regards to needed products
- Supports teammates in managing their time, prep and mentoring the quality and efficiency of work
- Responsible for maintaining organization of walk-ins, dry storage and other kitchen storage areas
- Responsible for ensuring that needed ingredients are ordered
- Collaborates with Executive Chef and Chef de Cuisine to create seasonal appropriate dishes

We are searching for a qualified individual to join our harvest team for 2022. You would work as part of a small crew that participates in all aspects of harvest operations as listed below and would need to be self-sufficient and motivated.
ESSENTIAL DUTIES AND RESPONSIBILITIES
The position itself is very versatile and cellar duties include but are not limited to: cap management (pump-overs, punch-downs, delestage), crush pad duties (sorting, cleaning etc.), inoculations, additions, brix and temp reading, drains, racks, digs, barrel work), cleaning/sanitizing, vineyard sampling, of course lots of cleaning, plus inclusion in tastings and the exposure to a wide array of job duties within the winery.
DAYS/HOURS
During active harvest expect to work six days a week; we always make sure you get one day off, and we usually do not crush on the weekends so those are usually lighter days. During the week we try to keep the days to 12-hour days (normal overtime rules apply; 1.5 times pay after 8 hours per day or 40 hours per week.
START DATE
The position would run late August/early September through middle of November (before Thanksgiving).

The company is growing and needs energetic and efficient lab personnel with the right attitude to join their Paso Robles team. The Lab Technician position will report to the Assistant Winemaker and is primarily responsible for the processing of vineyard samples and pulling of fermentations during harvest.

Reports to: Winemaker

Scope: The Lab Tech is responsible for the collection and processing of winery samples, collection and analysis of fermentations, cleanliness of lab and proper use of lab equipment. During the harvest season, this position may require working outside, early mornings or nights, weekends, extended hours and work in the cellar. The ability to work flexible hours is required.

Responsibilities:
• Timely Data Entry for Lab analysis run
• Vineyard Sampling
• Operation of lab equipment
• Maintaining a clean and organized workspace
• Reporting of numbers in timely manner
• Using safe practices when working with Lab and Cellar chemicals
• Understanding and using the PPE (personal protective equipment)
• May require lifting of 50+ lbs.
*Other Duties may be assigned

Qualifications:
• Self-motivated individual who can perform at a high level, even while unsupervised.
• Organized, with strong written and verbal communication skills
• Previous experience with large and small winemaking practices is a plus.
• Knowledge and execution of safe work practices.
• Ability to troubleshoot and present multiple solutions.
• Come with a strong work ethic and positive attitude.

Education:
• High School Diploma or general education degree (GED)
• College level education is a plus, but not required.

Working Conditions:
• Must be able to lift 50+ pounds.
• Long hours of standing on your feet.

• Timely and accurate processing of vendor invoices, using AMS (Advanced Management Systems)
• Reviewing all invoices for appropriate documentation, approval and coding, prior to payment
• Maintaining W-9s and preparing 1099s

• Daily order entry of customer orders, sample orders and other wine requests

Wine Tour Driver - Paso Robles Wine Country
Starting compensation: $17/hr*+cash tips (=$22-$45+/hr typically w/cash tips included…seriously)

Part Time driver for our Semi-Private (modified "Hop On, Hop Off") wine tasting tour service based in Paso Robles. Pick up customers from their accommodations and shuttle them among the wineries we presently service. Review customers' itineraries and discuss any questions/concerns with manager. Inspect, clean, wash, and help maintain vehicles (very minor). Pickup supplies. Misc. tasks/duties as needed.

*Starting pay of $17/hr is for applicants with a Class C COMMERCIAL (or better) license with Passenger Endorsement. For applicants without, you will start training at $15/hr, and will be increased to $17/hr once that license is secured.
