Wakame Glass Noodle Salad – Robert Hall Winery

Wine Pairing: 2019 Cavern Select Vermentino
A fun light pairing for Spring – this wine complements the sweetness and spice of the salad with the peach, citrus, and wet stone flavors of this crisp wine.
Ingredients
Spicy Soy Dressing:
Zested and juiced blood orange
1/2 tbsp. of grated ginger
6 cloves of garlic
1 tbsp. of Sambal
1/3 cup of soy sauce
1/4 cup of rice wine vinegar
1/6 cup of sesame oil
1/3 cup of vegetable oil
Directions
Pulse all ingredients in a blender until smooth. Refrigerate until use.
Wakame Glass Noodle Salad
6 oz. of glass noodles (bean threads)
1/2 cup of Wakame Salad
1/2 cup of spicy soy sauce
1/2 cup of radicchio (shaved red cabbage can be subbed)
6 sweet peppers, julienned
1/4 bunch of chopped cilantro
1/4 cup of chopped roasted peanuts
Directions
In a stockpot, bring 2 quarts of water to a boil. Once boiling, remove the pot from heat and add noodles. Let the noodles sit in hot water for 10 minutes. Pour off the noodles and rinse with cold water. In a large mixing bowl, combine all ingredients (except the peanuts) and toss. Plate salad and garnish with peanuts. Enjoy with a glass of Vermentino!
