Smoky Bacon & Blue Cheese Chicken Salad Pita Sandwich

SummerWood’s Smoky Bacon & Blue Cheese Chicken Salad Pita pairs perfectly with our newly released 2019 Rosé. Perfect for the warm weather, this pairing has us sitting in our backyard, sipping Rosé, and enjoying the warm summer evenings. Our Rosé is normally something we would first pour at Paso Robles Wine Festival, and we are excited to share it this week in honor of this community gathering we are missing so much.
Wine Pairing: 2019 SummerWood Rosé
½ cup plain fat-free yogurt
¼ cup crumbled blue cheese
1 tablespoon light mayonnaise
½ teaspoon freshly ground black pepper
3 cups mixed or seasonal greens
1 ½ cups shredded cooked chicken
4 bacon slices, cooked and crumbled
2 medium tomatoes, seeded and chopped
4 (6 inch) whole-wheat pitas, cut in half
Combine the first 4 ingredients, stirring well. Combine lettuce, chicken, bacon, and tomatoes in a medium bowl stirring well. Drizzle yogurt mixture over chicken mixture, toss gently to coat. Spoon ½ cup chicken salad into each pita half. Serve immediately. Yields 4 servings. Pro Tip Using high-quality bacon and grilling up some seasoned chicken breast will kick this great recipe up a notch.
