Not Your Grandpa’s Burger – Peachy Canyon Winery

Wine Pairing: Zinfandel – Peachy Canyon’s 2020 Especial
A mouth-watering grilled (or smoked!) cheeseburger with a secret sauce that might make you rethink your love for In N Out’s spread. Pairs beautifully with a Paso Zinfandel. We like ours with our 2020 Especial Zinfandel.
1 lbs. ground beef (or meat preference)
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. dried thyme
1 tsp. salt
2 tsp. pepper
2 tbsp. mushroom powder
1/4 cup Worcestershire sauce
*Optional, but highly suggested: 1/4 lbs. ground bacon (throw chopped bacon in your food processor to make ground bacon!)
Secret Sauce Ingredients
1/4 cup mayo
1/4 cup yellow mustard
1/4 cup ketchup
1 tbsp. maple syrup
1 tbsp. red wine vinegar
2 tsp. Worcestershire sauce
2 tbsp. chopped Mezzetta Chili Peppers (if you don’t like heat, use pickles)
1 tsp. salt
1 tsp. pepper
1 tbsp. lime zest
1) In a bowl, combine all ingredients for the sauce. Set aside until ready to assemble.
2) In a separate bowl, combine meat and ground bacon if using and then fold in spices and Worcestershire sauce. Divide into thin patties.
3) Grill patties over medium-high heat to doneness preference. Smoke them at 225 degrees for 20-30 minutes depending on doneness preference.
4) Serve with a side of sweet potato fries.
