Ep 13: Rally for Restaurants – The Hatch Rotisserie & Bar | Thomas Hill Organics

For the last episode of 2020, we wanted to show some special love to a group of folks who definitely deserve it after giving all they got and then some this year: and that’s our restaurants. The restaurant scene has grown so much these last several years, with cuisine easily rivaling the big metro areas of Los Angeles and San Francisco, which Paso sits right in the middle of.
Winemakers and the most popular wine brands in the area all maintain the growth and explosion of the Paso Robles wine scene, which could not be possible without these important players in the hospitality game.
Today, we will meet two of my favorites: Debbie Thomas of Thomas Hill Organics, and Maggie Cameron of The Hatch Rotisserie & Bar. Both these restaurants so different in their take on elevated cuisine in Paso, but both adopt that same heart for what they do and where they are blessed to do it. Both also possess that special kwan that Paso encapsulates so well within its community.
If you haven’t tried either of these, I guarantee by the end of this conversation, you will have plans to. The restaurant business is notoriously tough, and not for the faint of heart. It can eat you up and spit you out, and in 2020 with so many shutdowns, it has done that to far too many. Although candid, and pulling no punches on how this year has treated them, you will hear threaded in optimism and genuine heart and hope that is the reason these are the kinds of brands and restaurants Paso will be known for, for many years to come.
