AboutLe Cuvier produces exquisite small-production wines from dry-farmed vineyards on the west side of Paso Robles. Founded by local wine legend John Munch, we promote a hands-off approach to winemaking, which results in wines of distinct character. The deep-hued, opaque & intense character one experiences from Le Cuvier wines is borne from this hands-off approach, married with these three philosophies:
Wild yeast fermentation is practiced exclusively.
Dry-farmed fruit is chosen 95-98% of the time.
Each wine spends a minimum of 33 months in neutral oak, reaching uncommon maturity.
Our resulting wines not only develop a complex array of flavors and aromas, but are also incredibly age-worthy.
We invite our Elliptical Society members and guests to join us at our stunning hilltop location for a truly indulgent tasting experience.
We are excited to welcome you to a sit-down flight & entrée or the original wine & food pairing experience at Le Cuvier Winery.
Now offerings paired wine & charcuterie tasting experiences on Thursdays.
While we are pet-friendly on our covered patio, please note pets must be on a leash and well-behaved.
