Aboutdilécta Wines is a boutique, family-run winery nestled in the oak-studded hills of Paso Robles’ Willow Creek District. With a name meaning “beloved,” this creative haven crafts small-lot Rhône and Bordeaux–inspired wines—think Syrah-Grenache blends, bold Cabernet blends, and even a sparkling Blanc de Noirs. Each label features a hidden heart, a whimsical nod to the winery’s artistic soul and warm, expressive philosophy.
Led by vintner Paloma Bilson and her son, Andre Minassian, dilécta offers an intimate tasting experience that celebrates connection, craftsmanship, and storytelling. Guests can enjoy a flight of five expressive wines while wandering through the estate vineyards or savoring local cheese and chocolate pairings. With a casual patio, lawn games, friendly winery dogs, and a tasting room that doubles as an art gallery, dilécta invites visitors to relax, discover, and feel at home in the heart of Paso Robles wine country. -

- The Dilécta tasting room is located in the heart of Zurita Vineyards. Several acres of estate Zinfandel, between 35 and 45 years old, followed by a couple acres of Cabernet Sauvignon and Petite Sirah encompass the majority of the property.
