Calwise Spirits is an innovative microdistillery that has built its success upon its “Liquid California” mantra. Their distillpub opened in early June 2018, near Paso Robles’ Tin City neighborhood, and features a craft cocktail program, tasting bar, and artisan flatbread pizzas.
Founded in 2016 by Aaron Bergh, who at age 26 is one of the youngest master distillers in the world, Calwise Spirits specializes in spirits that are infused with native California ingredients. Their flagship spirit is their Big Sur Gin which was inspired by Aaron's hikes in the Big Sur region; the gin is distilled from premium wine grapes along with a variety of native botanicals including sage, yerba santa, and elderberry. Calwise is also known for their Blonde Rum, made from raw sugar cane and aged in chardonnay barrels, and their Spiced Rum, which highlights California's orange groves. Their latest addition is their whiskey barrel aged Big Sur Gin that you will have to go in and try for yourself.
In just two years, Calwise has gained widespread retail distribution including retailers such as Bristol Farms, Whole Foods, Bevmo, and Vons. Calwise Spirits can also be found at many local bars and restaurants including Fish Gaucho, Eleven Twenty-two, La Bellasera, and many more.
