Dim Sum Dreams: The Art of Cantonese Dumplings

Join ONX Vineyard Stays & Chef Alma Ayon on Wednesday, August 5th, from 6 PM to 8 PM at the Briarwood Cottage for a hands-on culinary experience celebrating the art, technique, and joy of Cantonese dumplings.

Step into the world of dim sum and discover why dumplings are at the heart of Cantonese cuisine. In Dim Sum Dreams: The Art of Cantonese Dumplings, this interactive cooking class highlights the incredible diversity of Chinese dumplings—an essential part of the region’s culinary tradition and a beloved staple of the dim sum table.

In this immersive class, guests will make four different kinds of dumplings and cook them using three classic techniques: steaming, pan-frying, and boiling. Because listing every dumpling that exists would take all night, the focus is on mastering foundational skills that open the door to endless variations at home.

Working in small teams, everyone will get their hands dirty—preparing flavorful fillings, making dough, and practicing traditional folding techniques to shape dumplings just right. Along the way, you’ll learn how different wrappers, fillings, and cooking methods create distinct textures and flavors.

The menu features Cantonese favorites, including guo tie (pot stickers) with their signature crispy bottoms and tender tops, siu mai (shumai) filled with pork and shrimp, and delicate har gow, known for their translucent, chewy wrappers and sweet shrimp centers. A bonus dish of deep-fried shrimp balls rounds out the menu, served alongside sweet soy sauce, spicy, crispy chili oil, and hot mustard for dipping.

Throughout the evening, guests will enjoy thoughtfully selected ONX wines, chosen to complement the savory fillings, crisp textures, and bold dipping sauces—adding a wine-country twist to classic dim sum. Chef-led instruction, cultural storytelling, and professional tips are woven naturally into the experience, making the class both educational and deliciously fun.

No prior cooking experience is required. All ingredients and equipment will be provided. Please wear comfortable shoes, as you’ll be standing, folding, cooking, sipping, and learning throughout the class.
