SEEKING
We are seeking a skilled and reliable Line Cook to join our culinary team. The ideal candidate will be responsible for preparing high-quality dishes according to recipes and standards, maintaining a clean and organized workstation, and performing efficiently in a fast-paced environment.
POSITION
This is a full-time position, and the right candidate will have the ability to multitask, work in a fast-paced environment, work under the direction of the Executive Chef and follow Halter Ranch policies. Responsible for the overall success of the daily kitchen operations – prep, service, and breakdown. Line Cook is responsible for ensuring the quality, hygiene and other standards are maintained or surpassed by the culinary department. Ability to lead the staff and manage all food related functions which display culinary talents and passion. Works to continually improve guest and team satisfaction. Supervises all kitchen areas to ensure consistency and quality. Must ensure sanitation and food standards are achieved and maintained. Line Cook is responsible for ensuring the Halter Ranch culinary standards and responsibilities are met; supporting Executive Chef with kitchen operations and culinary goals; and ensuring exceptional customer service. Must be willing to work weekends and most holidays, and some evenings for signature winery and private events. Reports directly to the Executive Chef.
DUTIES AND RESPONSIBILITIES
• Ensure Executive Chef standards are met
• Assist with daily kitchen prep work and station set-up before service
• Maintain the highest quality food preparation standards
• Ensure portion control, uniformity of taste, and quality
• Complete the following daily duties – preparing, cooking, and presenting culinary dishes
• Enforcing and maintaining strict health and hygiene standards in the kitchen
• Ability to troubleshoot any problems that might occur prior to, during, or after service
• Assist in developing, designing, and contributing to the culinary program, systems, and products.
• Support supervision of kitchen operations
• Maintain the organization of all kitchen storage – walk-in, dry storage, and other storage areas.
• Assisting and ensuring all ingredients are ordered
• Support in prep and execution of lunch, winery events, and private events
• Maintain compliance with food and beverage policies. Ensure standards and procedures are followed.
• Ensure compliance with food handling and sanitation standards
• Estimates daily production needs on a weekly basis and communicates production needs daily.
• Assists Executive Chef and Sous Chef with all culinary operations

The Opportunity
We are seeking a visionary and results-driven General Manager who will reside within our beautiful Central Coast and lead all aspects of daily distribution, warehouse operations, sales strategy, and financial performance. This role offers the opportunity to shape the future growth of a respected distributor in one of California’s most dynamic wine regions.
Key Responsibilities
• Develop and execute strategic growth plans across wine and spirits categories.
• Contribute to management of a high-performing sales and operations team: 15 sales representatives, plus associated office/warehouse staff.
• Partner with ownership to manage key supplier relationships and expand market share.
• Manage and coordinate Information Technology to provide effective sales, accounting and logistic support.
• Oversee logistics, inventory management, and regulatory compliance.
• Drive profitability and achieve aggressive revenue and margin targets.
• Support chain restaurant and grocery presentations at the corporate level.
• Develop and manage pricing strategies across the portfolio.
• Monitor KPIs, forecasting, budgeting, and operational efficiency.
• Willing to drive up to 3 hours to work key markets and potential overnight stays.
Qualifications
• 10+ years of leadership experience in wine and spirits distribution.
• Expert in Excel and PowerPoint.
• Strong understanding of Central Coast and Paso Robles market dynamics.
• Exceptional leadership, communication, negotiation, and analytical skills.
• Proven ability to scale teams, systems, and revenue.
• Passion for wine and spirits with a strong commercial mindset.
• Bachelor’s degree preferred or equivalent professional experience.

As a harvest lab intern, you will have the opportunity to be involved in all aspects of winemaking while learning from a highly motivated and dynamic production team. The work we do is challenging but rewarding. Our goal is to make the best wine possible and have fun while doing so.
Lab: August to November/December
As a Harvest Lab Intern, you'll play a key role in the winemaking process, with hands-on tasks that include:
• Conducting key analyses (alcohol, pH, TA, VA, ML, RS, SO2, phenolics).
• Monitoring fermentation procedures and helping to implement them.
• Preparing and inoculating yeast, malolactic cultures, and other additions.
• Setting up, calibrating, and operating lab equipment—both automated analyzers and traditional wet chemistry methods.
• Preparing reagents, standards, and solutions for analysis.
• Collecting and analyzing samples from tanks, barrels, and bins.
• Monitoring alcoholic and malolactic fermentations.
• Performing lab trials and recording data in Excel.
Qualifications:
• Laboratory experience and applicable course work is desired but not essential.
• We are seeking a highly motivated team player with strong organizational skills and the ability to multi-task and perform precise work in a fast-paced environment. The candidate must be punctual and be prepared to work flexible hours including overtime, weekends, day shifts, night shifts, and holidays. Students must take off the fall semester to be eligible for this position. You must have a reliable means of transportation and a clean driving record.

Opolo Wines, LP is seeking two vineyard samplers to assist in monitoring maturity in our vineyards for the 2026 harvest. We are looking for motivated team members eager to expand their knowledge and experience related to grape growing & maturity scouting in a positive & fun working environment.
Duties to include but not limited to:
• Assess maturity and vine development and record field observations.
• Collect maturity samples.
• Manage personal sampling schedule and coordinate daily routes to ensure timely results.
• Assist the lab in processing juice samples for analysis and tasting.
• Work closely with the Winemaking team, providing daily maturing analysis for blocks.
• Daily tasks will be more lab-focused as harvest slows down for the vineyard side (barrel sampling, analysis, inoculations, additions).
• Assist with compiling and filing seasonal viticulture notes and maintaining vineyard data reports.
Qualifications:
Prior harvest experience is desired but not essential.

Cellar: August to November
Positions/Shifts Available
• Morning Crew
- Shift Start: 5am to 3-5pm
- Main duties-digging tanks, processing, pressing, tank additions, morning pumpovers/punchdowns, cleaning.
• Afternoon/Night Crew
- Shift Start: 1pm to 11pm-1am
- Main duties include drains, processing, finishing press runs, sanitation and cleaning. Afternoon pumpovers/punchdowns
Both cellar shifts-duties to include but not limited to:
• Running crush equipment
• Barrel work
• Sorting fruit
• Cap management(pumpovers/punchdowns)
• Press operations
• Juice/wine transfers
• Additions and inoculations
• Brix/temp of fermenting tanks
• Assist with draining/pressing
• Equipment sanitization/ cleaning
• Other harvest related duties as required
