Ancho-Honey Smoked Shrimp – Paris Valley Road Estate Winery

Wine Pairing: Paris Valley Road, Malbec Rosé

Cépage Chef Joe White, of Paris Valley Road Estate Winery, has created this bright and savory pairing. We promise this will delight any palate and pairs exquisitely with the Malbec Rosé by Paris Valley Road. Serve as hors d’oeuvres or enjoy as your first course.

Ingredients
3 pounds of peeled & deveined Shrimp
1 Watermelon
4-6 Avocados
Tajín seasoning
Ancho-Honey Chile Marinade
Ancho-Honey Chile Marinade Ingredients
3 tablespoons Ancho Chile Powder
1 teaspoon Cumin
1 teaspoon Coriander
1 cup Soy Sauce
2 cups Honey
1/2 cup Worcestershire Sauce
1 cup Grapeseed Oil
Directions
Step 1: Make the Ancho-Honey Chile Marinade by combining all ingredients together & stir until a smooth liquid
Step 2: Take half of the Ancho-Honey Marinade and toss it with your shrimp. Save half of the marinade for plating once the dish is finished
Step 3: Let shrimp marinate for 6 hours prior to smoking
Step 4: Once shrimp is fully marinated, remove them from the marinade and place them in the smoker. Smoke shrimp at 220°F for 20 minutes or until shrimp is fully cooked
Step 5: While the shrimp are smoking, begin to slice your watermelon into 4 in squares & sprinkle with Tajín
Once shrimp is finished, put a slice of watermelon and 3 slices of avocado on a plate and place 3 shrimp on top. Take your extra ancho-honey marinade and drizzle on top of your plate. Now you’re ready to serve with our Paris Valley Road Malbec Rosé.
If you’re serving a large group, no problem! Take all your ingredients and place on a large serving dish and have your guests help themselves. You can also combine your ingredients into fun & easy to eat skewers. However you decide to enjoy this dish, it will definitely be the stand out at your next summer BBQ!
